Originally from Nice, France, it was considered food for the poor, since the leftovers of the vegetables that were cooked were used. As its name indicates, ratatouille is a stir-fry (rat: food; touille: stir), and it was cooked over low heat for several hours. Today, this vegan recipe conquers both chef and diners.

The preparation is for 3 people and takes a total time of 70 minutes: 30 for organizing the food and 40 for cooking. It is a simple recipe and can be made in a quiet afternoon.

Ingredients

  • 1 eggplant

  • 2 zucchini

  • 2 round tomatoes

  • 1 green bell pepper

  • 1 red bell pepper

  • 1 large onion

  • 2 cloves of garlic

  • extra virgin olive oil

  • Salt

  • Provencal

  • Oregano

Steps

1. We turn on the oven to heat it up to 180°C.

2. Cut the aubergine into half-centimeter slices and strain them with salt so that they sweat and lose their bitterness.

3. Meanwhile we prepare the rest of the vegetables: we cut them into half-centimeter slices.

4. Finely chop the garlic and set aside.

5. We oil a fountain with high edges.

6. Arrange the vegetable slices in a spiral: we alternate the different types of vegetables and colors, placing the slices vertically starting from the edge of the tray, one after the other going towards the center, until forming a spiral.

7. In a bowl, mix 3 or 4 tablespoons of oil with the Provencal herbs and minced garlic, and distribute this dressing over the vegetables. Put a little salt on top.

8. We take the oven preheated to 180 ° C, with the rack in the lowest part of the oven so that the vegetables do not brown too much on top. We cook them for approximately 40 minutes, or until the vegetables are very tender.
