One of the most typical foods in China and that is cooked with few ingredients. It is a quick and easy recipe that is made in a few steps. Today on Il Chef News I will explain how to make a Chow Fan.
A food dating back to 4,000 BC, it became one of China's best-known dishes. Being notorious, it has spread throughout the world, to the point that in several countries the name and some ingredients were adapted. One case is the "pork chaufa rice" in Peru, to which pork is added instead of shrimp. Other denominations are "chinese rice" in Colombia, Venezuela and Honduras, and "fried rice" in Paraná, Paraguay and Puerto Rico.
Despite the varieties of names and ingredients that can be given to this food, in this post we will see how it is typically made. This dish that became so famous and important in the chinese cuisine.
Ingredients
80 grams of shrimp, 2 eggs, 1/2 carrot, 1 stem of green onion, 50 grams of bell peppers (red and green), 1 tablespoon of grated ginger, 1 head of garlic, soy sauce as needed, 50 grams of rice and 3 tablespoons of oil.
Method
- The first thing to do is remove the residual starch from the rice and leave it in a strainer for 15 minutes. Then cook the rice covered for another 15 minutes.
- While the rice is cooking, cut the vegetables into julienne strips, fillet the garlic and grate the ginger.
- Beat the eggs with a little salt.
- Heat the wok and when it smokes, add two tablespoons of oil. Right there the beaten eggs are cooked as scrambled eggs and at the end they are removed.
- Heat the wok again and cook the vegetables in order of hardness (1 minute per vegetable).
- When the vegetables are cooked, they are deglazed with soy sauce and the shrimp are cooked with the vegetables.
- To finish, add the rice and the egg.
